Kid Approved Yummy Carrot Muffins

Mmmm... Doesn't that look good? 

In the interest of my own sanity, we have a very limited breakfast menu around here.  In the winter it's hot cereal: oatmel, brown rice or buckwheat.  In the summer it's homemade granola.  But today is the first day of spring and I'm sick of hot cereal and I don't have any granola made.  What to do?  I googled "healthy gf muffins" and here is the first link I clicked on.  On which I clicked.  Whatever.

Of course, because I can't follow a recipe to save my life I had to tweak it a little.  Oh, and also because failed to notice that it called for baking powder, which I ran out of last week.  I used baking soda instead & also decided to use kefir instead of milk because I have read that it helpes to leaven baked goods.

Here is my version:  The kids loved them and ended up eating 2 each!

Put the following ingredients in mixer:
1 c.  all purpose gluten-free flour  (Bob's Red Mill)
1/2 c.  brown rice flour
1/2 c. millet flour
1 tsp. xanthan gum
1 tbsp flaxseed meal
1 1/2 tsp. baking soda
1/2 tsp. salt (regular or sea salt)
1 tsp. cinnamon
1/4 cup sugar -I used a combination of white sugar & maple syrup

Add:
1 egg
1/2 c. orange juice
3/4 c. kefir
1/4 cup coconut oil, in a liquid state
1 c. grated carrots

Mix all together & divide the batter between 12 oiled muffin tins.  Bake for 20 minutes at 350*

The kids loved them and ended up eating 2 each!
